Chifa Opens Today

Signature cocktails are only the beginning of the offerings at just-opened Chifa.

Jose Garces opens his Cantonese-Peruvian outlet today, the latest in a series of restaurants that celebrate the many facets of Latin cuisine. His latest venture will be his most creative yet. Diners who may be skeptical of the Asian-Latin flavor connection, fear not. It really works.

At Chifa, chef Chad Williams will be serving dishes like Arroz Chaufa con Mariscos (fried rice with Chinese ham, egg and scallion, topped with soy- and ginger-glazed shellfish) alongside Aji Gallina (a slow-poached chicken in a sauce of aji amarillo, walnuts and queso fresco). The star of the menu will no doubt be the numerous ceviches (Garces expects to offer ten varieties each night), served from a special ceviche bar.

There will be signature cocktails galore, which will be sipped by too-cool-for-school scenesters in the lower level lounge. The restaurant also has two communal tables (one on the first and bottom floors). We can't wait to add this new one to our list of Philly favorites!
