Apple Latkes

Apple Latkes


  • 2 idaho potatoes, grated
  • 1 granny smith apple, peeled, grated and wrung out in a towel
  • ½ yellow onion, peeled, grated and wrung out in a towel
  • 1 egg
  • ¼ cup matzo meal
  • 1 tsps. Salt
  • ½ tsp. pepper
  • 1 tsp. Chopped sage
  • Equal amounts rendered chicken fat and olive oil for frying


  1. Add all ingredients in a bowl. 
  2. Get a heavy bottomed fry pan hot to 325 degrees.
  3. Add chicken fat and olive oil.
  4. Drop spoonfuls of potato mixture into oil to fry.
  5. Flatten with the back of a spatula and cook until golden brown, flip and repeat on other side.
  6. Remove from pan and cool on a rack with paper towels underneath.
  7. Do not blot on towels directly.
