Porcini Rubbed Rib Eye and Corn on the Cob

Porcini Rubbed Rib Eye

Ingredients:

2ea, 10oz, rib eye steaks
4oz dried porcini mushrooms
1T extra virgin olive oil
Salt and pepper


Directions:

1) grind porcini in a coffee grinder into a fine powder. Mix with oil olive to for a paste.
2) Season steaks liberally with salt and pepper. Then rub with the porcini paste.
3) Sear in cast iron skillet for 3 min per side for medium/rare
4) Serve with creamed spinach and fingerling potatoes


Corn on the cob

Ingredients:

Parmigiano-reggiano
Olive oil
Salt and pepper

Directions:

1) Brush with olive oil, season with salt and pepper
2) Cook until corn is charred
3) Finish with Parmigiano-reggiano
Steak serves : 4
Corn on the cob: 1 ear per person
