Mussels ala Franco Red or White

2 lb. Cultivated Mussels Farm raised any supper market
Garlic -- fresh cloves
Parsley 1/2 bunch chopped
Olive Oil -- 1/2 cup
29 oz. con Italian tomatoes
Lemon ( for white sauce )
White wine
1 can of Clam Juice
Spices- salt, black pepper,seed pepper,oregano.
Extra: Shrimp, Scallops Lots of Italian Bread
Saute garlic in olive oil add your mussels and put lid on for 2 min.
Open & add your spices pinch of everything and a 1/2 cup of your white wine , clam juice & chopped tomatoes and parsley and put the lid back on for 5 min. ( white sauce minus tomato add lemon juice of 1 med. lemon ). This is Great before any meal great with white wine and lots of Grilled Bread to dunk.
As a meal we use the extra shrimp & scallops and more Italian Bread. or Pasta.
