Jerked Shrimp, With Corn, Tomato & Honeydrew Salsa

1# jumbo Shrimp Peeled & deveined
3 T Jerk seasoning sauce
1T Olive oil

2 Potatoes, Blanched & sliced
1 Small Onion diced
1 Green Pepper Diced
1 t Jamaican jerk seasoning

1 Large Tomato Diced
3 t red onion diced
1 small jalapeno minced
1/2 Honeydew, Diced
1 Ear Corn blanched & all corn removed from cobb
2 t cilantro
2 t Basil
Salt & pepper to taste

1. Blanch potatoes to al dente & remove & slice into 1/4" thick slices, hold
2. Combine all ingredients for salsa & hold in refrigerator until service
3. add oil to pan & add shrimp, saute for 1 minute & add jerk sauce
4. Add oil to 2nd pan & add onions & peppers, saute for 3 - 4 minutes, add potatoes & cook for 8 - 12 minutes or until potatoes are soft & onions have color
5. season with Salt & pepper & Jamaican Jerk Seasoning

transfer to a plate & top with Shrimp & Salsa
