KONA FILET TIPS WITH GRILLED SHALLOT BUTTER


Caramelized Shallot Butter

Ingredients:
1 pound    Whole Butter, Room Temp
1 pound    Shallots sliced 1/8 inch thick
¼ cup    Clarified Butter
¼ cup    Au jus
2 Tbsp    Kosher Salt
2 Tbsp    White Wine
2 Tbsp    Cracked Black Pepper
Directions:
1.     Caramelize the shallots with the Clarified butter
2.    Deglaze with Au Jus & White Wine
3.    Remove from heat and allow to cool to room temp.
4.    Combine Caramelized Shallots, Butter Salt & Pepper in bowl & incorporate

Kona Rub

Ingredients:
2/3 cups    Sugar, Granulated
2 cups    Decaf Coffee Ground
   
1 cup    Grated Pecorino
½ cup    Dry Mustard
½ cup    Granulated Garlic
2/3 cup    salt
2 Tbsp    Cracked Black Pepper
Directions:
 Combine all ingredients and mix thoroughly

Coffee Crusted Filet Tips

Ingredients:
1/2 pound    Filet tips, Cleaned of all sinew & fat
1 ½ Tbsp    Coffee Rub
4 each     Roasted shallots cut in half
2 cups    Assorted Mushrooms
1 ounce     Clarified butter
2 ounce     Caramelized shallot butter


1.    Preheat your oven to 350 degrees.
2.    Lightly toss the peeled shallots in ¼ T clarified butter and roast for 30-45 minutes till soft.
3.    Heat a large sauté pan over medium high heat.
4.    Toss the filet tips in the kona rub.
5.    When the pan is hot add the clarified butter, filet tips, and mushrooms. Cook for 5-7 minutes, tossing occasionally.
6.    Add the roast shallots to heat through.
7.    When the tips are at the desired doneness, add the shallot butter and remove from the heat.  The butter should not be heated to the point of breaking.
8.    Place on a warm plate and enjoy.
