RECIPE: Julie Wilcox’s Vegan Thumbprint Corn Muffins
I have a long list of happy corn bread memories. There were the mouth-wateringly delicious warm corn muffins that the deli down the street from where I grew up in Manhattan served up every morning, the honey infused Southern-style cornbread I indulged in over the decade I vacationed in Kiawah Island every Fourth of July, and then the mini raspberry corn muffins at Mary’s Marvelous in East Hampton, which my daughter first fell in love with and then got me hooked on. As with all the baked goods recipes in this book, my primary interest in developing this recipe was to eliminate as many refined ingredients as possible, yet to also maintain the taste and texture of muffins that contain those ingredients. Although these muffins can last up to a week in the refrigerator and a couple of months in the freezer, they are best heated and served warm.
Preparation Time: 30 minutes
Serves 12 muffins
Ingredients:
1 tablespoon flax seeds
¼ cup water
1½ cups spelt flour
1 cup fine corn flour (for a cakier texture) or cornmeal (for a rougher texture)
1½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon fine grain sea salt
1½ cups plant-based milk (i.e., oat or almond milk)
2 teaspoons lemon juice
2 /3 cup maple syrup
1 /3 cup canola oil
Optional: strawberry jam to fill the muffins
Preparation:
Preheat the oven to 350°F.
Combine the flax seeds and water in a prep bowl and set aside.
In a large bowl, whisk together the spelt flour, corn flour or cornmeal, baking powder, baking soda, and salt.
In a separate bowl, add and lightly stir the plant-based milk and lemon juice. Then add the flax seed and water mixture, maple syrup, and canola oil, and stir to combine.
Add the wet ingredients to the dry ingredients. Mix with a wooden spoon until well combined (some lumps are okay). Let the batter sit for 3 to 5 minutes. Lightly grease the muffins tins, then add the batter about two thirds of the way up. If you’re adding the jam, add a teaspoon in the center of each muffin (it will sink into the muffin when it bakes). Bake for 22 minutes, then test by inserting a toothpick in the center of a muffin. The toothpick should come out clean, without batter, but appear moist. Serve warm or cool to room temperature, refrigerate for up to a week, or freeze and reheat when ready to eat.

Recipe: Butternut Squash Cheesy Rice with Sausage Serves 4-6
Ingredients:
2 tablespoons extra-virgin olive oil
1 small yellow onion, minced
5 garlic cloves, minced
¼ teaspoon kosher salt
¾ pound (3 to 4 links) uncooked sweet Italian turkey sausage, casings removed
¼ teaspoon ground cinnamon
1½ cups short grain brown rice
4 cups cubed butternut squash (cut into ½ -inch cubes)
4 cups low-sodium vegetable broth
3 sprigs fresh thyme plus 1 tablespoon fresh thyme leaves, divided
6-8 fresh sage leaves
1/3 cup freshly grated Parmesan cheese
1 cup grated Fontina cheese
Freshly ground black pepper (optional)
Instructions:
- Heat the olive oil in a Dutch oven or large sauté pan over medium heat. When the oil is hot and shimmering, add the onion, garlic, and salt, and cook for about 5 minutes or until the onions are very soft and translucent. Add the sausage and cinnamon and cook, stirring and breaking up the meat into small pieces with a spatula, for about 5 minutes or until no longer pink. Add the brown rice and cook for 2 minutes, stirring constantly, to toast the grains.
- Stir in the butternut squash cubes, and then add the vegetable broth, thyme sprigs, and sage leaves. Bring to a boil, then immediately lower to a simmer. Cover with a lid and cook for 35 minutes until the rice is just tender, the butternut squash is soft, and most of the liquid has been absorbed. (You still want a little liquid in the pan to help create the creamy texture of the finished rice.)
- Remove the thyme sprigs and sage leaves with a fork and discard. (Careful, they’re hot!). Give the rice a really good stir, breaking down some of the butternut squash cubes. (Your rice will have a risotto-like consistency.)
- Turn off the heat and stir in the Parmesan and Fontina cheeses, then stir in the thyme leaves. Taste and season with a little extra salt if needed and freshly ground black pepper (if using). Serve warm.
TIP: Cut prep time in half by buying pre-cubed fresh or frozen butternut squash.
