Recipe provided by Chef Mama Joy Jones:
6 medium red potatoes
1/2 cup minced green onions
1 cup feta cheese
1/4 cup low fat milk
Salt and pepper to taste.
- Boil or steam potatoes until tender with a fork.
- Drain then place in medium bowl. While hot, mash potatoes with a hand masher or large fork. (You don't have to remove skins or mash until smooth).
- Add milk, mix with fork.
- Evenly incorporate feta and green onions. Serve hot. Enjoy
