Asian Wing Sauce
1 tbs Chopped Garlic
1 tsp Chopped Fresh Ginger
1 tbs Sesame oil
Pinch Crushed red pepper
½ Cup Soy Sauce
½ Cup Water
2 Cups Kikkoman Teriyaki BBQ glaze
1 tsp Honey
¼ Cup Brown Sugar
2 tbs Corn Starch
1 tsp Chopped Fresh Cilantro
1 tsp Sesame seeds
1ea Fresh Squeezed Lime
Method of Preparation:
Mix corn starch with equal parts of water set aside
Sauté garlic and ginger in mixed oil and sesame oil till golden
Add red pepper flakes directly to them
Add, water, soy, bbq glaze, honey, brown sugar, and bring to a boil
As soon as it boils add corn starch slurry and boil 1 min, then shut off
Last add lime juice, cilantro and sesame seeds
Blueberry Chili Jam
1 pnt Fresh Blueberries
½ cup lemon Juice
2 cup Sugar
1 pinch Salt
2ea Jalapeño seeded and diced
Method of Preparation:
Combine all ingredients in small sauce pot.
Bring to a simmer and reduce by one third.
Puree with hand blender and allow to cool.
Foundation Room Tomato Gazpacho
6ea Ripe Tomatoes, peeled and chopped
1ea Peeled and sliced white onion
1ea English cucumber peeled
1oz Red Wine vinegar
4oz Tomato Juice
1oz White Vinegar
1oz Lemon Juice
1/4cup Sugar
2ea Jalapeño Pepper, remove seeds and tops
pinch Salt
pinch White Pepper
1ea Red Pepper
1ea Green Pepper
2oz Olive Oil
2tbs Cilantro, cleaned chopped
Method of Preparation:
Combine all ingredients. Blend slightly, to desired consistency. Store in plastic container overnight.
