Ginger Pork Tenderloin with Maple Sautéed Pumpkin

Cook Time: 25 minutes


Ingredients:

  • 2 10oz pork tenderloins (cleaned, cut in half)
  • ½ cup Lime juice
  • ½ tbsp rosemary (minced)
  • 1 tsp Black pepper
  • ½ tsp cayenne pepper
  • 1 ½ tsp ground ginger
  • 1 clove garlic (minced)
  • 1 ½ lb. Fresh pumpkin (peeled, seeded, cubed)
  • 1 each Red delicious apples (peeled, cored, diced)
  • ½ each Red onion (julienne)
  • 4 tbsp butter
  • ¾ cup dried fruit (cranberries, raisins, currants)
  • ¼ cup maple syrup
  • As Needed Salt


First preheat oven to 375. Next clean and cut pork tenderloins and place in small bowl. Add lime juice, rosemary, peppers, ginger and garlic mix till well coated. Now put pork tenderloins in roasting pan and bake till done about 15 minutes.
Now in a large sauté pan over medium heat add butter and onions and cook for one minute. Next add pumpkin and apples and cook till pumpkin is tender. Add maple syrup and dried fruit and simmer two more minutes. Adjust seasoning with salt and enjoy.
