Cajun Grilled Marinaded Flank Steak with Grilled Peaches and Mangos
One Flank Steak - trimmed neatly
Marinade:
3 cups of Extra Virgin Olive Oil
1 Red Pepper Roasted
5 cup of BBQ Sauce
3 T of dijon mustard
1 T of horseradish
1 t of cayenne pepper
1 t of kosher salt
1 t of black pepper
1 t of chopped garlic
2 T of Worcestershire
2 Ripe Mangoes
4 Ripe Peaches
4 Tomatoes
2 Onions
Some Organic Greens
Mix all the ingredients of the Marinade together with a whisk
Rub and Coat the Flank Steak with Marinade and let sit in refrigerator for 3 hours or as long as you can before your guests arrive for the barbecue
Place cold meat on grill - cook until temperature of 160 degree registers inside flank steak - careful to turn steak evenly and not overly char any of the outer skin as marinade will tend to make steak blacken more quickly
Remove steak from grill and let sit for 5 minutes while you grill fruit and onions
Peel Mango and remove seed
Leave skin on peaches and remove seed
Slice tomatoes and onion
Quickly sear flesh of mango, peach - 2 minutes max
Grill tomato and onions - about 3 mintutes for each side
heat will intensify sugar in all
Slice Flank Steak again grain of the meat and serve with grilled fruit and onions
