Waffles de Chocolate

Waffles de Chocolate
Yield: 16 fl. Ounces, about four servings

Ingredients:
3 eggs, separated
3 tbsp granulated sugar
1/3 cup all-purpose flour
¼ cup cocoa powder
1 tsp baking powder
½ tsp Kosher salt
¼ cup milk
2 tbsp oil

Procedure:
1)    Separate the eggs.
2)    Beat the egg yolks and sugar in a stand mixer until they are smooth and light.
3)    In a bowl, sift together the flour, cocoa powder, baking powder and salt.
4)    Pour the flour mixture into the egg mixture.
5)    Add the milk and oil, and beat to form a smooth paste.  You may need to use a rubber spatula to completely combine everything.
6)    In a new bow, whip the egg whites until stiff.  Tip: you must use an EXTREMELY clean bowl or the whites won’t firm up.
7)    Fold about half of the batter into the whipped egg whites first, then fold the remainder into the batter with a spatula to combine.
8)    Place 4 oz. into a waffle iron and cook.

Chunky Banana and Dried Cherry Syrup
Yield: 3.5 cups

Ingredients:
2 cups granulated sugar
2 cups water
12 oz. bananas, sliced into wheels
8 oz. dried cherries
2 cups Maple syrup

Procedure:
1)    Bring water and sugar to a simmer until I just begins to turn a light amber color.
2)    Add the cherries and allow to sit in this mixture overnight in the refrigerator.
3)    The next day, drain the cherries.
4)    Put the bananas and the Maple syrup into a saucepan, and when it is simmering, add the cherries.
5)    Remove from heat and serve over the waffles.
