Traditional Chinese Pork Shu Mai

Traditional Chinese Pork Shu Mai
Serves 5 people

Filling:
- 10 oz pork loin (diced)
- 1 oz pork fat (diced)
- 4 pieces Chinese black mushroom (cut up)
- 8 oz small whole shrimp (50-60)

Seasonings:
- 1 tsp salt
- ½ tsp sugar
- ¼ teaspoon white pepper
- ½ tsp sesame oil
- 1 tbsp cornstarch

Skin:
- 30 Cantonese wonton wrappers (cut in 1 round circle)

Shrimp filling:
- Shrimp (ground) 2 pieces
- Red color - a few drops

Mix filling and seasonings in a mixing bowl. Stuff 2 teaspoons filling into the skin and wrap it like a small cup. Put 1 drop of shrimp filling on the top of the shu mai. Steam for about 7 - 8 minutes.
