Shrimp Linguine

 

12 Shrimp, peeled and de-veined with tail on

 

1/2 bunch of Asparagus

 

1pt Grape tomatoes

 

2 clove Garlic, chopped

 

4T Butter (1/2 stick)

 

3/4c White Wine

 

salt and pepper to taste

 

1/2 box Linguine

 

 Grated Parmesan cheese (for garnish)

 

 

Directions:

 

1. Bring a pot of water to boil and cook pasta.

 

2. Cut asparagus into 1-2inch pieces, set aside. Cut tomatoes in half, set aside.

 

3. Using a large, deep saute pan, melt 2T butter.

 

4. Add garlic and shrimp to butter. Cook and flip shrimp for 2 minutes, shrimp should become pink.

 

5. Add asparagus and tomatoes, season with salt and pepper, and saute for additional minute.

 

6. Pour wine over shrimp mixture and simmer for 2-4 minutes. Then add remaining 2T of butter.

 

7. Add drained pasta to shrimp and toss together. Remove from heat.

  8. Divide pasta between and garnish with Parmesan.
