Short Ribs

Short Ribs (Ingredients)
Two pieces of 10 ounce boneless beef short ribs
One onion diced
One carrot diced
One celery diced
Two cans of Birch beer
3 quarts of veal stock
Salt and pepper to taste
1 bunch of thyme


Method
In a large pan add olive oil heat on high until starts to smoke
Season short ribs and carefully place in pan
Simmer well on both sides
Approximately two minutes on each side
Add vegetables and stir
Add Birch beer
Reduce by half
Add veal stock and thyme and raise to simmer
Cook for 1 hour and 45 minutes
Remove short ribs from liquid
Strain the liquid and reduce by 3/4
Add Thyms jus


Corn Polenta


2 ears of sweet corn
1 bunch of scallions cut
1 clove of garlic minced
1 bag of spinach
1 box of Polenta/ Corn Meal
2 Cups of Milk
3 Cups of Water
Salt and Pepper to taste


Method
Remove the corn *1 ear will be demonstrated by Chef and one will already be prepped!
In a large sauce pot heat on high
Ass corn, onions and garlic - simmer for a minute until onions are opaque
Add water and milk
Bring to a bowl and carefully add the Polenta while whisking
Turn heat on low
Add spinach
Cook for two minutes and pull off heat and serve
