Ritz Cracker Crusted Scallops With Pan Seared Filet

Recipe Provided by Chef James Cranmer: ACME

Ingredients:

12 oz Sea scallops
2 oz butter
10-15 each Ritz crackers (original, whole wheat)
1 tsp Orange zest
1 tsp Fresh tarragon (chopped)
1 tsp Fresh thyme (chopped)
As needed cracked black pepper
2 8oz Filet mignon steaks
1 tbsp olive oil          
As Needed Salt and pepper

 Directions:

  1. Preheat oven to 400 degrees. 
  2. Fill ramekins with scallops and top with a pad of butter, place in oven. 
  3. While scallops are baking make the crust bye smashing crackers in a small bowl and mixing in zest and fresh herbs. 
  4. Bake scallops for around 8-10 minutes and pull out of oven to top with crust. 
  5. Place scallops back in oven let crust crisp and turn golden brown. 
  6. While oven is hot and scallops are in the oven, warm and oven proof sauté pan over medium high heat. 
  7. Season filets with sea salt and cracked pepper. 
  8. Pour in olive oil and wait till a light smoke appears. 
  9. Place filets in pan and cook for about 2 minutes. 
  10. Flip filets in pan and place in oven. 
  11. Cook filets for 6-7 more minutes for medium donness.
