Pumpkin Tiramisu

Tiramisu Mixture

Ingredients:

  • 4 Large eggs
  • 4 tablespoons sugar
  • 16 ounces mascarpone cheese
  • 8 ounces pumpkin puree
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon vanilla extract


Directions:

1) Separate egg yolks from whites and place into separate bowls.
2) Whisk egg whites with 2 tblsp. sugar until light and fluffy.
3) Whisk egg yolks with remaining sugar until doubles in volume.
4) Combine mascarpone cheese and pumpkin puree with egg yolk mixture, add pumpkin pie spice and vanilla extract
5) Blend well, then slowly add fluffy egg whites into mascarpone mixture

Lady Fingers

Ingredients:


Directions: (Lady Fingers and Tiramisu Mixture)

1) In bowl combine espresso with Kahlua and Grand Marnier.
2) Dip lady fingers in coffee mixture and layer in a 11.5 -by -15 inch cake pan.
3) Spread a third of the  tiramisu mixture evenly of lady fingers.
4) Repeat steps 2 and 3 until finished
5) Topped with shaved chocolate and amaretti cookies

Garnish

Ingredients:

  • 1 cup shaved  bittersweet chocolate
  • 1 cup crushed amaretti cookies
