Pork Fried Rice

Pork Fried Rice
Provided: Chef Joseph Poon
Ingredients:
1 Tbsp Vegetable oil
1 Egg
4 cups Cooked White Rice, dried overnight

Seasonings:
½ tsp salt
1/2 tsp light soy sauce
1/8 white pepper
½ cup Diced BBQ pork, ham, chicken or shrimp
½ cup defrosted frozen peas and carrots, diced (after they’re thawed they become soft and easy to cook)
3 Tbsp green onion, diced
1 tsp vegetable oil - added at the last minute to make it look shiny and tasty

Procedure:
Heat up the wok or frying pan and add vegetable oil.
The secret to cooking fried rice is a hot wok.
That way the ingredients won’t stick to the wok and burn.
Add whole egg and stir at once.
Cook the egg until it becomes scrambled.
Then add the rice and seasonings.
Stir constantly until golden brown. Add the diced meat and stir. Finally, add the vegetables and stir. You’ll smell the green onion flavor.
Then add a few drops of vegetable oil and stir again.
