Pomegranate Garden Salad
Ingredients
Salad Mix
1 Cucumber, Sliced
1 Cup Grape Tomatoes
1 Carrot, Shredded
1 Small Avocado, Sliced
½ Cup Pomegranate Seeds
Pomegranate Balsamic Vinaigrette
Ingredients
½ Cup Balsamic Vinegar
1 Cup Pomegranate Juice
2 Tablespoons Brown Sugar
Vegetable Oil
Method
Combine vinegar, pomegranate juice and brown sugar in sauce pan and reduce for 10 minutes over medium heat.
Let cool.
Whisk in oil.
Refrigerate.
Serve over garden salad
Serving Method
Combine Salad mix, cucumber, tomato and carrot in mixing bowl.
Transfer mix to plate or bowl.
Top with avocado.
Dress with Pomegranate Balsamic Vinaigrette
Sprinkle on pomegranate seeds
