Pasta with Chicken Sausage and Greens

Ingredients:
1 pound Chicken Sausage, raw
3 tablespoons olive oil, divided
1 lemon, juiced and zested
1 large bunch kale, stems removed, thinly sliced
2 cups whole grain pasta, dry
1 cup cannellini beans
1/2 cup crumbled feta cheese (about 3 ounces)
2 tablespoons fresh parsley, chopped
Salt and pepper to taste

Directions:
Bring a large pot of salted water to boil. Add pasta and cook just until tender but still firm to bite, stirring occasionally. Drain, reserving 3/4 cup pasta cooking liquid.
While pasta is cooking heat one tablespoon olive oil in a large skillet. Add chicken sausage (whole links) and cook 2-3 minute per side or until firm and partially cooked. Remove from pan and cool.
Ad the remaining olive oil, the kale, garlic and zest to the same pan. Cook 5-6 minutes to wilt the kale. Add the chicken sausage, white beans and lemon juice to the pan and cook 3-4 minutes or until sausage is cooked through. Once chicken sausage is cooked, add the pasta, pasta water and feta. Season with chopped parsley, salt and pepper. Toss to combine and serve.
