Pan-Seared Filet with Red Hot Shrimp

Filet
Ingredients:
- 4 6oz Filet steaks
- 1 tbsp. Olive oil
- ½ tsp. Salt
- ½ tsp. Cracked black pepper
Directions:
- Preheat oven to 450 degrees.
- Season filets with salt and pepper on all sides.
- Heat large oven-proof pan on medium high heat and add olive oil.
- Once you see a light smoke appear place filets in pan and sear for about two minutes on one side.
- Flip steaks in pan and place in lowest part of oven. Roast in oven for 6-10 minutes for medium/ medium well steaks.
Shrimp
Ingredients:
- 1 ¼ lb 16/20 ct shrimp (peeled, deviened)
- 5 each garlic cloves (minced)
- 4 tbsp Olive oil
- 1 tbsp red pepper flakes
- 2 12oz canned whole tomatoes
- 1 tsp dried basil
- 2 each hass avocados
- 8 oz sour cream
- 1 each lime (juiced)
- 1 tsp salt
Directions:
- Drain tomatoes and reserve juice.
- Seed tomatoes and cut into quarters.
- Heat medium sauté pan over medium heat and add oil, garlic, and red pepper flakes, cook one minute.
- Add shrimp, tomatoes, tomatoes juice, and basil.
- Bring to simmer and cook till shrimp are done about 5 minutes.
Avocado Sauce
- Simply peel, pit and dice avocados and place in bowl.
- Add sour cream, salt, and lime juice stir till combined.
- Serve pan roasted filet over red shrimp and top with cool avocado sour cream.
