Pan-Seared Filet with Red Hot Shrimp
 
Serves 4

Filet
Ingredients:
  • 4 6oz Filet steaks
  • 1 tbsp. Olive oil
  • ½ tsp. Salt
  • ½ tsp. Cracked black pepper
 
Directions:
  1. Preheat oven to 450 degrees.
  2. Season filets with salt and pepper on all sides.
  3. Heat large oven-proof pan on medium high heat and add olive oil.
  4. Once you see a light smoke appear place filets in pan and sear for about two minutes on one side.
  5. Flip steaks in pan and place in lowest part of oven. Roast in oven for 6-10 minutes for medium/ medium well steaks.
 
Shrimp
Ingredients:
  • 1 ¼ lb 16/20 ct shrimp (peeled, deviened)
  • 5 each garlic cloves (minced)
  • 4 tbsp Olive oil
  • 1 tbsp red pepper flakes
  • 2 12oz canned whole tomatoes
  • 1 tsp dried basil
  • 2 each hass avocados
  • 8 oz sour cream
  • 1 each lime (juiced)
  • 1 tsp salt
 
Directions:
  1. Drain tomatoes and reserve juice.
  2. Seed tomatoes and cut into quarters.
  3. Heat medium sauté pan over medium heat and add oil, garlic, and red pepper flakes, cook one minute.
  4. Add shrimp, tomatoes, tomatoes juice, and basil.
  5. Bring to simmer and cook till shrimp are done about 5 minutes.
 
Avocado Sauce
  • Simply peel, pit and dice avocados and place in bowl.
  • Add sour cream, salt, and lime juice stir till combined.
  • Serve pan roasted filet over red shrimp and top with cool avocado sour cream.
