Mashed Potatoes

5 # Yukon Gold Mashed Potatoes Peeled & Diced
2 T Salt
6 T Cream Cheese diced
½ # cheddar Cheese
2 Tbsp Milk
 
- Place potatoes in pot & add salt, cover with water 2 “ above the potatoes
- Bring to the boil & the lower heat to a simmer & cook for an additional 15 mins or until fork tender
- Remove form water & drain fully
- Transfer Potatoes into a Mixer with the PADDLE attachment
- Add Milk & Cream cheese
- Mix for 10 seconds
- Scrape down sides
- Add salt & pepper & Cheddar
- Mix for 15 seconds
- Scrape down sides
- Check seasoning & adjust
- Mix for 10 seconds
DO NOT OVERBEAT!!!!
