Guinness Beef Stew

Guinness Beef Stew

Ingredients
2 lbs Beef Cubes ( Chuck or Sirloin)
3 Tsp Olive Oil
2 Tsp Flour
1/2 tsp Salt
1/2 tsp Black Pepper
Pinch of Cayenne Pepper
2 large Onions coarsely chopped
1 clove of Garlic crushed
2 Tsp tomato puree, dissolved in 4 Tsp of water
11/4 cups of Guinness Beer
2 cups diced carrots
Sprig of fresh Thyme
bunch of chopped Parsley
Directions:
Trim meat and cut into 2 inch cubes. Toss beef with oil and season the flour with salt, pepper and cayenne. Toss meat with seasoned flour.
Heat oil in a large skillet over medium high heat. Brown the meat on all sides Reduce the heat, add the onions, garlic and tomato puree to the skillet, cover, and cook for 5 minutes. Transfer the contents of the skillet to a casserole and pour half the Guinness into the skillet. Deglaze the pan and pour over the meat. Add the remaining Guinness, carrots and thyme. Stir and adjust seasonings cover the casserole and simmer over low heat, or bake in a 300 degree oven until the meat is tender. (2-3 hours) Garnish the beef with parsley and serve.
