Grilled Salmon with Red, White and Blue Salsa

•    1 pint blueberries
•    1 Serrano pepper, seeded and minced
•    ½ cup jicama, diced
•    1 Kiwifruit, peeled and diced
•    Juice of 1 lime
•    1/4 red onion, finely chopped
•    Salt and pepper to taste
Combine all ingredients in a bowl.

White Bean, Feta and Roasted Pepper Dip

•    4 red bell peppers
•    1, 15oz can of cannellini beans, rinsed and drained
•    1/4 cup oil
•    2 garlic cloves, peeled
•    1/4 cup crumbled feta cheese
•    2 tablespoons chopped fresh basil
Char peppers directly over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel, seed, and quarter peppers. Puree peppers, beans, oil, garlic, and cheese in processor. Season with salt and pepper.
