Easy Roasted Salmon and Margarita Cake

Easy Roasted Salmon
No time to cook?  Season salmon and pop in the oven for a terrific meal ready in minutes.

Makes 2 servings

1 tablespoon light brown sugar
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/8 teaspoon ground cinnamon
Salt and pepper to taste
2 (6-ounce) fresh salmon fillets, (Atlantic Canada or coast of Maine)

1.  Preheat oven 400° F. Line baking sheet with foil.
2.  In resealable plastic bag, mix together brown sugar, chili powder, cumin, cinnamon, and season to taste. Add salmon, coating all over and pat in seasoning. 
3.  Transfer to prepared pan. Bake 12-15 minutes or until fish flakes easily.

Strawberry and Kiwi Mixed Green Salad
Enliven a salad with strawberry and kiwi tossed with a light flavorful vinaigrette. 

Makes 6 - 8 servings

8 cups mixed greens (Bibb, red leaf, spinach)
1 1/2 cups sliced strawberries
2 kiwis, peeled and sliced
1 tablespoon sesame seeds
1 green onion, chopped
1/3 cup raspberry vinegar
2 teaspoons Dijon mustard
1/4 cup canola oil

1. In large bowl, mix together greens, strawberries and kiwi.
2. In small bowl, whisk together sesame seeds, green onion, vinegar, Dijon mustard, and oil. Refrigerate vinaigrette until ready to use.
3. When ready to toss salad, add dressing gradually, serve immediately.

Margarita Cake 

Sweet and salty, light and refreshing, this white cake flavored with non-alcoholic margarita mix and lime, on a pretzel crust makes quite an “ole!”

    Ingredients

1 1/2 cups coarsely crushed pretzels

2 tablespoons light brown sugar

5 tablespoons butter, melted

1 (18.25-ounce) box white cake mix

1 1/4 cups bottled non-alcoholic margarita mix

1/4 cup canola oil

1 tablespoon grated lime rind

3 egg whites

1 (8-ounce) frozen fat-free whipped topping, thawed

Additional grated lime rind, if desired

 
 
Instructions

1. Heat oven 350°F. Coat 13x9x2-inch pan with nonstick cooking spray.

2. In medium bowl, mix pretzels, brown sugar and melted butter. Press into pan.

3. In large bowl, beat cake mix, margarita mix, oil, lime rind and egg whites until well mixed. Carefully pour batter over pretzel mixture.

4. Bake 25-30 minutes or until light golden brown and top springs back when touched lightly in center. Cool completely. Frost with whipped topping; sprinkle with additional lime rind. Refrigerate.
