Ingredients:
Chicken Thighs
1 Large Onion Diced
2 Large Tomatoes Diced
3 T Chopped Parsley
1 Red Pepper Diced
1 Green Pepper Diced
1.5 Cups Rice
ΒΌ Bacon Chopped
2 Cups Chicken Broth
1 Cup Tomato Juice
1 T Olive Oil
3 Garlic Cloves Chopped
Salt & pepper
1 Tsp Paprika
Directions:
1. Saute The Bacon, Onions, Garlic, Tomatoes & Peppers until smooth
2. Add The Rice & Stir & Coat well with cooked tomato & Pepper mix
3. Add the Chicken Thighs skin down & cook for 3 minutes
4. Add Remaining Ingredients & bring to the simmer for 10 minutes
5. Check seasoning & Cover with foil & transfer to a 350 deg oven for 30 minutes
6. Poke Holes in foil to release the steam & peel the foil off
7. Let sit for 5 minutes & then serve!
