ChickPea Burger

ChickPea Burger
Provided by: Executive Chef Jordan Sauter of Philadelphia Bar and Restaurant
Ingredients:
1 15.5 oz can chickpeas (drained)
2 whole eggs
1 egg yolk
tsp smoked paprika
generous pinch cumin
salt to taste
2 clove garlic finely chopped
2 cups flour
juice of 1/2 lemon

Method:
In food processor, combine eggs, yolk, flour and seasonings.
thoroughly mix, scraping sides to properly incorporate if need be.
place this mixture in a large mixing bowl.
in same processor, add lemon juice and chickpeas and pulse until a mixed but still slightly chunky consistency is achieved.
add this mix to the flour/egg mixture and thoroughly incorporate the two mixtures.
shape into patties and pan fry in vegetable oil over medium heat until both sides are golden brown and finish in a 350*F oven for 4 minutes.

CHIPOTLE Aioli (for Chick Pea Burger)


Ingredients:
one 7 oz can chipotles in adobo
two whole eggs
4 cloves garlic
juice of 1/2 lemon
2 cups vegetable oil
tsp sugar
tsp salt

Method:

in food processor, add eggs, chipotles with sauce, garlic, lemon juice, sugar,
salt and mix thoroughly, slowly drizzle in oil to emulsify.
