Asparagus Wrapped in Proscuitto, Scallops Wrapped in Bacon, Sweet & Sour Meatballs

Asparagus Wrapped in Proscuitto
 
Pre-heat oven at 350 degrees
 
Ingredients:
-          Pencil Asparagus
-          Aged Provolone Cheese
-          Sliced Proscuitto or Capicola
 
Directions:
1)      Cut 1 to 2 inches off of base asparagus spear.
2)      Take single spear and lay across ¼ slice of provolone cheese and one slice of either capicola or prosciutto.
3)      Tightly wrap meat and cheese around asparagus spear and layout on parchment paper covered baking sheet.
4)      Lightly brush the tops of the wrapped spears with olive oil and bake in over at 350 degrees for 15 minutes.
5)      Ready to serve.
 
Scallops Wrapped in Bacon

Ingredients:
-          Fresh or Frozen Sea Scallops
-          Raw Bacon
-          Jack Daniels
-          Honey
-          Chopped Ginger
 
Directions:
1)      Wrap Fresh or Frozen Sea Scallops with ½ slice of raw bacon
2)      Secure bacon with toothpick
3)      Pan Fry wrapped scallop in oil just to brown.
4)      Place pan-fried scallops on baking sheet and bake in oven until bacon is fully cooked.
5)      Reduce 1 cup of Jack Daniels after alcohol cooks off, add honey to reduction.
6)      Add Ginger (chopped or ground) to reduction, stir until even consistency.
7)      Toss cooked scallops in frying pan with reduction just to coat.
8)      Ready to serve.
 
Sweet and Sour Meatballs

Ingredients:
-          Meatballs
-          80% lean ground beef
-          Fresh Bread Crumbs
-          Worcestershire Sauce
-          Fresh Garlic
-          Fresh Basil
-          Fresh Parsley
-          Eggs
-          Salt
-          Pepper
-          Chili Sauce
-          Grape Jelly
 
Directions:
1)      Combine all ingredients, roll into ½ ounce meatballs.
2)      Lay meatballs out on a parchment paper covered baking sheet.
3)      Bake until internal temperature is 155 degrees.
4)      Sweet and Sour Sauce: 1 part Chili Sauce, 1 part Grape Jelly- Combine both ingredients in a sauteé pan, heat and whip until smooth.
5)  Gently toss cooked meatballs in sauce and serve.
