Watermelon Gazpacho

  • 3 lb Seedless watermelon diced
  • 1 c Cucumber (peeled and diced)
  • 1c heirloom tomato, diced
  • 2 large shallots
  • 3oz sherry vinegar
  • 2oz Fresh lime juice
  • 15 ea Cilantro leaves
  • 10ea basil leaves
  • 1tbs diced green jalapeno (no seeds)
  • Olive oil, salt and pepper to taste
  • Combine all ingredients and stir, keep refrigerated or at room temperature.
