The Mayor and S'mores Cookies

The Mayor Cookie

1 1/3 C shortening
1 C dark brown sugar
1 C white sugar
2 eggs
2 tsp vanilla extract
1/3 C melted dark chocolate, still liquid but not hot
1 tsp salt
1 tsp baking soda
3 C flour
1/2 C cocoa (like Hershey's)
1 1/2 C chopped* milk chocolate covered caramels (like Rolos or Milky Way)
1 1/2 C chopped* Reese's peanut butter cups
(*I use chooped candy no larger than 1/2" pieces.)
Beat together shortening and sugars until light and fluffy. Beat in egg and vanilla. Beat in melted chocolate.
Whisk together flour, baking soda, salt and cocoa powder. Add to shortening mixture. Mix on low to combine.
Remove dough from mixer and hand mix in chopped candy.
Ice cream scoop (approximately 2 tablespoons) onto lined cookie sheets about 2 inches apart.
Bake in pre-heated oven 350 degrees F for approximately 6 minutes take cookies from oven, poke a few pieces of chopped candy on top of cookie. Return sheet pan to oven and bake 4 to 5 minutes. 
Let cool on sheet pan. Remove to cooling rack after 10 minutes.

3/4 C butter - softened
1/2 C white sugar
1/2 C packed dark brown sugar
1 egg
1 tsp vanilla extract
1 1/4 C flour
1 C graham cracker - fine crumbs
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
1 1/2 C (8 oz) semi sweet chocolate chips
Ingredients for Topping:
Marshmallow Fluff
1 C graham cracker crumbs
3 (3.5 oz) Chocolate Bars (like Hersheys Milk Chocolate)
Beat together butter and sugars until light and fluffy. Blend in egg and vanilla.
Combine flour, graham cracker crumbs, baking soda, salt and cinnamon. Add to butter mixture. Mix on low, just to combine.
Stir in chocolate chips.
Ice cream scoop (approximately 2 tablespoons) onto lined cookie sheet about 3 inches apart.
Bake in pre-heated oven 350 degrees F for 5-6 minutes.
Remove from oven - working quickly, make a slight depression in center of cookies. Dollop tablespoon marshmallow fluff, garnish marshmallow with course crumbs and lastly, top with chuck of chocolate bar.
Return to oven and cook until done (4-5 minutes).
