Spicy Watermelon Chilean Sea Bass

Diced (1"x 2") Crispy Chilean Sea Bass       6 oz
Deep fry and place on side plate.
   ((sea bass))


 SPICY WATERMELLON SAUCE
Heat up the sauté pan and add the following: 
Olive Oil                             1 tsp
Fresh Chopped Ginger                   1 tsp
Diced Scallion (white part)               2 Tbsp
Diced Yellow Pepper                        1/2 cup
Diced jalapeno                                    3 Tbsp
Balsamic Vinegar                                2 Tbsp
Watermelon Puree                               1/4 cup
2 C diced watermelon
1 Tablespoon of chopped Cilantro
Total sauté time is about 35 seconds

Add 2 cups diced watermelon and sauté/crisp about another 5 seconds.

Pour the above mixture on the top of the fried Crispy Chilean Sea Bass

Sprinkle with 1 Tablespoon of chopped Cilantro on the top of the Sea Bass
as a  garnish before serving.
