Sautéed Pork Chops with Spicy Apple Chutney

Serves 4
 
Ingredients:

    * 6 each Tart apple peeled and sliced thin
    * 1 each Oranges zested and segmented
    * 1 tbsp Butter
    * 1/2 each Minced Jalapeno
    * 1 cup Orange Juice
    * ¼ cup Red wine vinegar
    * ¼ cup light brown sugar
    * 2 tbsp Honey
    * 1 tbsp chopped cilantro
    * 1 tbsp fresh minced ginger
    * 1 tbsp diced red peppers
    * 1/4 each minced red onion
    * TT S&P
    * 4 8oz Center cut pork chops
    * ½ tsp. Salt
    * 1 pinch cayenne
    * 2 tbsp Olive oil

 
Directions for Chutney:

   1. Sweat onions, ginger, jalapeno in butter till onions are translucent.
   2. Add orange juice, honey, vinegar, and sugar.
   3. Bring to boil and reduce bye half.
   4. Add half of sliced apples and toss for five minutes and add remaining items and turn off heat.
   5. Taste and adjust seasoning with salt.

 
Directions for Pork Chops:

   1. Start with a large sauté pan over medium heat.
   2. Season pork chops with salt and cracked pepper.
   3. Pour olive oil in pan and place pork chops in one at a time.
   4. Cook over medium heat for and 5 minutes each side flipping often to avoid burning.
   5. Serve with roasted or mashed sweet potatoes and spicy apple chutney.
