Philly Cheesesteak Boxty

- 4 cups Milk
- 1 3/4 cups Flour
- 1 tbsp Parsley - chopped
- 4 Eggs
- 1.5 tsp Salt and pepper
- 1 1/2 cups Mashed Potatoes - cold
- 4 tbsp Oil

In a large bowl or mixer combined milk, flour, eggs, salt and pepper. Add mashed Potatoes and and parsley and carefully mix by hand. Place oil in a saute pan and use a 6 oz ladle to evenly spread the batter. Cook on each side for 2-4 minutes and transfer to a sheet lined tray.

1. Place precooked Boxty on oiled griddle.

2. Saute Roaste Beef, onions, mushrooms, and 1 oz Demi Glace with american cheese.

3. Place boxty on oval plate and top with cheesesteak mixture and roll up.

4. Garnish top with cheez whiz drizzle.
