New England Curry Chicken

Not to be confused with authentic Indian food, New England curry is neither spicy or complicated: it's a simple and delightful preparation that my Grandma used to make every Autumn. Feel free to use store bought curry powder for this recipe.

Ingredients :

2 pounds chicken parts
3 tablespoon curry powder
3 teaspoon salt
1 cup white flour, sifted.
1/4 cup vegetable oil

1. Preheat  the oven to 350 degrees, and place a large saucepan on a burner over over medium heat.

2. In a large bowl, blend curry, salt, and flour. Dry the chicken with a paper towel, and coat with the flour mixture.

3. Add the oil to the saucepan, and wait two minutes until the oil is hot. Add the chicken pieces, one by one into the oil.

4. Brown the chicken pieces on two sides, and place on a sheet tray. Once all the chicken is browned off, bake for 15 minutes, or until done.
