Chipotle Lime Shrimp Tostadas

Ingredients: Shrimp serves 4
-1 chipotle chili in adobo (chopped)
-2 teaspoons adobo sauce
-2 tablespoon minced garlic
-1 teaspoon cumin (toasted and ground)
-1 tablespoon brown sugar
-1 lime (juice and zest)
-2 tablespoons cilantro (chopped)
-1 pound shrimp (peeled and deveined)
-1/2 cup of Tequila (your choice of brand)
1. Mix the chipotle, adobo sauce, cumin, brown sugar, lime zest, lime juice, tequila and cilantro in a bowl and and let marinate for 20 minutes.
2. Skewer the shrimp.
3. Oil up the griddle pan and grill the shrimp until cooked, about 2-3 minutes per side.

Tostadas and Toppings:

-8 small corn tortillas (day old)
-oil for frying
-1 pound grilled shrimp
-4 cups romaine lettuce (shredded)
-2 cups fresh salsa/pico da gallo (minced onions, cilanto, tomatoes, peppers, lime juice, salt, -pepper, olive oil
-2 cups black beans
-2 avocados (diced)
-Chili flavored sour cream (sour cream, cumin, chili powder, salt, & peppers, lime juice)
1.Fry the tortillas in oil until crispy and drain on paper towel
2. Assemble the tostadas by placing the other ingredients on top of the fried tortillas and garnish with chopped cilantro
