Best New Chefs Announced Tonight

Tonight, Food & Wine anoints their 2011 Best New Chefs. The publication started discovering new talent for the annual honor back in 1988, when they picked out such notables as Rick Bayless, Nobu, and Thomas Keller. Years and years ago Tom Colicchio was a BNC before he became a household name.

Some greats, though, have slipped through the cracks. Watch as editor-in-chief Dana Cowin reveals who didn't make the cut ("I have missed some really, really great chefs"), and who tried to claim he wasn't worthy of the prize.
