Barrerra Guacamole

Guacamole
Ingredients:
2   Ea.   AVOCADOS
1   TBS  DICED WHITE ONIONS 
1   TBS  CHOPPED BASIL
½  Oz.   LIME JUICE
½  Oz.   OLIVE OIL
2   Oz.    CHILE VERDE*
1   Ea.   HEARTS OF PALM, BIASED CUT
10 Ea.     CHIVE BATONS, CHOPPED
3   Ea.    ROASTED TOMATOES, CHOPPE
COTIJA CHEESE, SHAVED
SALT TO TASTE

Chile Verde
Ingredients:
4   Ea.   ANAHEIM CHILES
3   Ea.   GARLIC CLOVES
1   Bunch  CHIVES
1   Bunch  CILANTRO
SALT TO TASTE

Directions:
Combine and blend chile verde ingredients in blender. Reserve.
In a bowl, mix avocado with onion, basil, lime, olive oil and chives.
To serve, place avocado mixture in bowl, pour chile verde over top and garnish with hearts of palm, roasted tomatoes and shaved cotija cheese.
