6 Skinless boneless chicken breasts
2 16oz cans of white beans (any kind)
5 stalks of celery
1 green bell pepper
1 cup of shredded carrots
1 medium onion
1 pack white chili seasoning
1 12oz can of chicken stock
hot pepper sauce
Step 1: Heat 2 tbsps of olive oil in a pan. Cut the chicken into small cubes and cook till done.
Step2: Dice all of the vegetables. Heat 2 tbsps of olive oil in large pot. Cook vegetables for 5 minutes, then add chicken.
Step3: Add chicken stock, beans, and chili seasoning. Let simmer on low heat for 45 minutes until broth thickens.
Add as much hot pepper sauce and cilantro as you like. add salt and pepper to taste.
