Blackened Shrimp over Soft Polenta with Spicy Avocado Salsa
Soft Polenta with Hominy
Ingredients
5 cups Milk
1.5 cups Cornmeal
1 cup chopped hominy
¼ lb Parmesan cheese
¼ lb Butter (un-salted)
2 pinches salt
Method
Bring milk to simmer with butter
Wisk in cornmeal and hominy, simmer for 5-8 mins.
Add parmesan and season with salt

Dry Rub
3 oz. chili powder
1 oz. chipotle powder
8 oz. brown sugar
1 oz cumin
1 oz salt kosher
2 pinches garlic powder
2 pinches onion powder
Pinch ground black pepper
Pinch dry mustard
1/2 oz dry thyme
Mix all ingredients together
Method:
1) Heat pan
2) rub peeled shrimp with dry rub
3) Add oil and shrimp to hot pan, add a tablespoon of butter
4) Pan is hot and will smoke, turn flame down to finish cooking
5) Cook shrimp till done, about 3-4 minutes depending on the size
6) Place polenta in center of plate
7) Add fire roasted tomato salsa around the polenta
8) Place shrimp around polenta and top with Avocado Salsa
9) Serve
