Prosciutto Encrusted Tuna Loin with Watermelon and Basil Salad


Ingredients:
2 ea        Tuna Loin, 6 oz portions
6 slices     Prosciutto San Danielle, sliced paper thin
2T        Basil, chopped
2T        Parsley, chopped
To taste    Salt & Pepper
4T        Olive Oil

Method:
1)    Season Tuna with salt and pepper    
2)    Coat Tuna in chopped herbs
3)    Lay Prosciutto on clean surface, place Tuna on top, wrap Tuna with Prosciutto.
4)    In a large sauté pan, heat olive oil until it begins to smoked and carefully sear wrapped tuna on each side until Prosciutto is crispy
5)    Slice & serve

Salad Ingredients:
1 Cup        Seedless Watermelon, Diced
1 Cup         Crenshaw Melon, Diced
1 Bunch    Basil, chopped
To taste    Salt & Pepper
1T        Olive Oil

Method:
1)    In a large mixing bowl add all ingredients and mix well.
2)    Season as necessary
3)    Serve along side Tuna
