Mushroom Spaghetti with Champ Cream Sauce

Ingredients:
1 T minced garlic
1 T chopped shallot
1/4 cup sliced sundried tom
1/2 cup sliced mushroom (shiitake/crimini)
1/4 cup quartered artichoke hearts
1 T chopped thyme
1/2 cup dry champ
1/2 cup heavy cream
1/2 cup baby spinach
handful of grated pecorino
1/2 lb spaghetti
garnish with fresh basil and pecorino

Directions:

Sautee the following ingredients
1 T minced garlic
1 T chopped shallot
1/4 cup sliced sundried tom
1/2 cup sliced mushroom (shiitake/crimini)
1/4 cup quartered artichoke hearts
1 T chopped thyme

Start boiling pasta

add and reduce:
1/2 cup dry champ
1/2 cup heavy cream

then add:

1/2 cup baby spinach
handful of grated pecorino

Finally, toss in 1/2 lb spaghetti and garnish with fresh basil and pecorino
