Mozzarella en Carozza

MOZZARELLA EN CAROZZA OR “MOZZARELLA IN A CARRIAGE”

INGREDIENTS

- 1 loaf of seeded Italian bread
- 1 lb. fresh mozzarella
- 3 eggs, beaten
- ½ lb butter
- 1 cup all purpose flour
- 2 garlic cloves, finely chopped
- 2 tablespoons capers
- 2 tablespoons chopped parsley
- Juice of half a lemon
- 4 anchovies
- 1 cup of olive oil


DIRECTIONS

1.    Slice bread on a bias in ¼ ‘ thick slices
2.    Slice mozzarella and layer on bread and top with other slice of bread.
3.    Dip sandwich in flour and then dip in egg
4.    Heat oil in a frying pan
5.    Place sandwich in hot pan and brown on both sides
6.    Drain oil
7.    Sautee garlic in pan until fragrant, add anchovies and allow to break down
8.    Add butter, capers and parsley to pan
9.    Deglaze with lemon juice
10.    Pour sauce over the sandwich and enjoy
