Moo Shu Chicken Wrap

Ingredients:
· 1 Chicken breast skinless
· 2 cup napa cabbage
· 2  eggs cracked in bowl
· 10 small shiitake mushrooms
· ½ cup lily buds
· 1 cup bamboo shoots
· ½ cup Chinese celery
· ½ cup carrot
· 2 scallions
· 8 moo shu wraps
· 2 cup hoisin sauce
· 3 TBS Pure olive oil
· 1 tsp ground white pepper
· 2 tsp salt (or to taste)
· ¼ cup soy sauce

Procedure:
· Cook chicken in boiling water until tender and cooked through
· Cut chicken in to thin strips the thickness of a piece of butchers twine
· Cut napa cabbage; shiitakes; bamboo shoots; celery; carrots into strips the same thickness as the chicken
· Soak lily bids in warm water for 10 minutes and strain and discard liquid

Cooking Method
· In a large frying pan, heat oil until extremely hot
· Place egg and shiitake mushrooms in pan first and let cook for 30 seconds; then carrot; then napa cabbage; lilly buds; Chinese celery; bamboo shoots and cook for 3-4 minute (should be crunchy)
· Add S&P, soy sauce and 1 cup hoisin sauce
· Heat moo shu wraps in microwave for 20 seconds covered with paper towel

Assembly:
· Spread remaining hoisin sauce on wraps
· Place cooked ingredients into wrap
· Fold like a roll up napkin
· Enjoy!
