Recipe - Stateside's Pickled Ommegang Abbey Dubbel Watermelon Rinds
1 cup diced watermelon rind
1 and half cup Abbey Double
1 and half cup water
1/2 cup sugar
2 TB kosher salt
Finish with 2 TB sliced chives and 1/2 bunch mint, chopped
Salt and pepper to taste
Preparation:
Combine Abbey Dubbel, Water, Sugar and Salt in a medium sauce pan and bring to a boil. Add diced watermelon rind and lower heat to medium and cook for 30 minutes.
Drain and cool - then add herbs and salt and pepper to taste.
