Lamb Chops

Lamb chops
Marinate 6 lamb chops for 10 mins with:
2 tbsp olive oil
1 tbsp rosemary
1 tbsp garlic
S&P to taste
Heat grill pan and grill lamb chops for about 4 mins on each side.

Fingerling potatoes
Heat oven to 400 degrees
Toss 1/2 lb fingerling potatoes in:
3 tbsp olive oil
2 tbsp fresh thyme
1 tbsp paprika
S&P to taste
Roast potatoes on a sheet tray for about 15 mins.

Baby squash
1 quarter pound baby squash
1 tbsp olive oil
1 tbsp butter
1 tsp fresh parsley
S&P to taste
Heat grill pan with olive oil. Add parsley, bitter, squash, and s&p. Saute for about 10 mins.

Blackberry wine sauce
1/2 cup dry red wine
1/2 cup minced onion
1 tbsp lemon juice
1/3 cup fresh blackberries
1 tbsp sugar
In a saucepan sweat out minced onions. Add blackberries, wine, and sugar. Bring to a boil, then cut fire down to a simmer. Reduce by half, then strain sauce. Drizzle sauce over lamb chops.
