Hot Queso Dip

Recipe Provided By: Chef Elizabeth Fisher, author of "Dining with the Dollar Diva"

Ingredients:
1   roll loose sausage
1   jar cheese spread
1   can of diced or stewed tomatoes (reserve drained liquid)
4   jalapeno slices (or you can use porcini peppers, or pepper banana slices)
Crackers of choice, tortilla chips, melda toast, triscuits, pita or pretzel chips

Directions:
1. Brown sausage, season to taste (OPTIONAL:sprinkle crushed red pepper flakes) and drain well.

2. In a large microwaveable bowl, empty the cheese dips and the tomatoes, and jalapeno slices.
3. Microwave approximately 8 minutes or until the cheese has melted completely. Stir.
4. Remove from the microwave before the cheese burns around the edges.
5. Fold in cooked sausage and stewed tomatoes.
6. If cheese dip is too thick, use the reserve juice from the tomatoes until desired texture is achieved. (May have to reheat slightly to incorporate the juice from the tomatoes)
7. Serve with tortilla chips, melba toast, pita chips or pretzels.
