Hot Chocolate

Recipe provided by Monica Glass, 10 Arts Bistro & Lounge

Ingredients:
4 cups whole milk
1 1/3 cups heavy cream
1 vanilla bean
¼ cup sugar
4 ½ ounces dark (72%) chocolate
4 ½ ounces milk chocolate
¼ teaspoon salt
 
Directions:
1. Place milk, heavy cream and vanilla in a sauce pot. Bring to a boil.
2. Meanwhile, wet the sugar and cook to a deep caramel. Deglaze with the hot milk.
3. Whisk in chocolate, remove vanilla bean and blend with an immersion blender to combine. Strain. Enjoy!
 

YIELD: approx 2 quarts
