Healthy Tilapia w/ Arugula, Tomatoes & Caper Sauce

Ingredients:
1 pint cherry tomatoes, halved
1/4 teaspoon red-pepper flakes
3 tilapia filets
Ground salt and pepper
3 Cups fresh arugula
1 tablespoon butter (or olive oil)
1 tablespoon fresh lemon juice
1 tablespoon capers, rinsed and drained
Directions:
1. In a medium nonstick skillet, bring 1/4 cup water to a boil. Add tomatoes and red-pepper flakes; top with tilapia, and season with salt and pepper. Cover, and cook on High 3 minutes. (*Start making step#2 while it cooks*). Add arugula. Cover and cook about 1 minute more until the arugula is wilted.
2. Make sauce: Put melted butter in small sautee pan. Add lemon juice, and capers to skillet and swirl to combine with butter. Season sauce with salt and pepper. Serve tilapia over arugula and tomatoes; drizzle with sauce.
