Grilled Sweet Potato Bread

Bread made the day before can be sliced as coffee cake with a drizzle of butter or light fruit spread.
Ingredients:
- 1 1/2 cups flour
- 1 cup sugar
- 2 eggs
- 2 tbsp milk
- 3/4 cup pecans (chopped)
- 3/4 cup dried cherries and golden raisins (coarsely chopped)
- 1 cup mashed sweet potatoes
- 1/2 cup apple sauce
- 1/2 tsp cinnamon
Directions:
- Mix dry ingredients in large bowl.
- Mix wet ingredients in a small bowl.
- Gradually blend wet into dry mixture.
- Heat oven to 325 degrees. Pour mixture into small loaf pan. Cook for approximately 1hour 15 minutes. Or until brown on the outside and a toothpick comes out clean when pushed in the middle. Enjoy!
