Grilled Pork Loins with Jersey Apple Chutney

Ingredients:

  • 4ea 10-12oz pork loin chops
  • 2ea large jersey apples
  • 1cup diced sweet onion
  • 1/2 cup diced red pepper
  • 1tsp chopped garlic
  • 1TBSP chopped fresh ginger
  • 1/2 cup packed brown sugar
  • 1/2 cup dark or golden raisins
  • 1/2 cup apple cider vinegar
  • 2TBSP calvados apple liquor (optional)
  • 2tsp whole grain mustard
  • pinch red chili flakes

 

Directions:

1. Place all ingredients for chutney into a medium saucepan and bring to a boil making sure to stir often. Turn down heat and cook for 20-30 minutes until thick and syrupy.

2. Season pork chops with salt pepper and olive oil and grill on both sides until desired doneness is achieved. Medium to medium well.

 

Braised Swiss Chard

Ingredients:

  • 4 strips bacon, cut into a small dice
  • 1tsp chopped garlic
  • 2pounds swiss chard, chopped
  • 1/2 cup chicken stock
  • 1 tablespoon whole unsalted butter
  • salt and pepper to taste

 

Directions:

1. Render bacon on medium high heat in a large frying pan till crispy. Add garlic season with salt and pepper and cook for 2 minutes until garlic begins to color. Add swiss chard and and allow to cook for 3 minutes stirring constantly. When chard begins to wilt and chicken stock and cook until chard is vibrant green and cooked through. Add butter and stir to combine. Drain chard on paper to wells and serve.

2. Chefs Tip

Remember to always season prior to searing and not to over cook. A temperature of 150 is optimal
